With the current Nintendo Switch ecosystem, the only possibility of the 🇨🇳 flag on display in the game might be:
1. The flag is used to represent Hong Kong (which uses no flag in past first-party Switch games)
2. This game allows custom setting (like the Olympics).

In the iQue Player version of Animal Crossing (N64), the villager favor to return the Pokémon Pikachu was replaced by returning the iQue GBA.
Interesting, Pokémon Pikachu had an official China release, albeit not distributed by iQue.
